Aarti Sanghavi

1. AARTI SANGHAVI
Inspired by her Indian heritage and world travels, Aarti Sanghavi, the executive chef of seafoodcentric The Hake, cooks a global mashup. Her slightly spicy “chorizo,” fashioned out of opah and served with a 63-degree egg, is destined to be a classic. 1250 Prospect St., La Jolla, 858.454.1637

2. STEFANI DE PALMA
Working closely with acclaimed executive chef William Bradley, Stefani De Palma is chef de cuisine at one of SoCal’s premier fine dining destinations—Addison at the Fairmont Grand Del Mar—where she creates multicourse gastronomic journeys. 5200 Grand Del Mar Way, Del Mar, 858.314.1900

3. BRAD WISE
Brad Wise is the brains behind TRUST, where he uses a wood-fire grill to cook seafood, meat and vegetables with creative flair. Smoky grilled cauliflower with golden raisins, mint, curry vinaigrette and searing serrano aioli is a prime example. Wise plans to open a new bar and gastropub, Hundred Proof, this summer. 3752 Park Blvd., Ste. 105C, Hillcrest, 619.795.6901

4. STEVE BROWN
Fresh from his pop-up multicourse dinners, chef Steve Brown is now permanently ensconced at the new Bar Logan and Cosecha, where his Baja-influenced, modern American menu of small plates uses locally grown vegetables from nonprofit Wild Willow Farm. At the same time, he’s developing a casual restaurant in Imperial Beach. 2163 Logan Ave., Barrio Logan, 619.804.4552

5. ALEX EMERY
Tapped to lead all dining concepts at the iconic La Valencia Hotel, Alex Emery is turning out signature seafood dishes, such as The MED’s grilled octopus with white beans, chorizo, lobster butter and chimichurri. 1132 Prospect St., La Jolla, 858.454.0771
