Beau du Bois started bartending on his 21st birthday and hasn’t looked back, collecting nearly every award in the industry as he developed cocktail programs at some of the top restaurants in the world, including the Michelin-starred The Restaurant at Meadowood in Napa and Ensue and Alcove in Shenzhen, China. Du Bois joined San Diego taco institution Puesto (eatpuesto.com) this year, just in time to put his signature touch on the cocktail menu at the new Puesto Mission Valley location, featuring margaritas on draft, large-format drinks for groups and seasonal sips.
