Set to open in early 2025, the iconic Nobu restaurant is building upon Hotel del Coronado’s over 130-year history.

As Blackstone continues its more than $550 million revitalization of the historic Hotel del Coronado, the ownership group has announced the arrival of Nobu in early 2025, the crown jewel in the restoration’s final phase.
"The opening of Nobu at Hotel del Coronado will mark another milestone in our $550 million investment plan to restore and revitalize this iconic property,” shares Blackstone managing director Brian Kaufman. “From day one, it has been our goal to ensure the Hotel Del is able to provide guests and community members a one-of-a-kind experience, and we are thrilled to add a world-class dining partner like Nobu.”

Founded by chef Nobu Matsuhisa and Academy Award winner Robert de Niro, Nobu has become known worldwide for its Japanese cuisine served in stunning concept-forward spaces. Occupying more than 3,700 square feet, Nobu at Hotel del Coronado will feature the brand’s signature dishes—think sushi rolls, black cod miso, and yellowtail jalapeño—in an indoor-outdoor environment. The oceanfront dining room will be accompanied by an outdoor covered patio with a pagoda bar and a dedicated sushi bar.
